Tilapia w/ Tomato Caper Sauce

I came across this yummy recipe from Gina’s Skinny Recipes, which is a fabulous recipe blog that I like to check out when I’m looking for new recipe ideas. I’ve mentioned this blog before in a video I did ages ago, but I love Gina’s blog because she has such a wide variety of low cal recipes! I altered the recipe slightly, since I wanted to use what I already had in my fridge. The original recipe calls for wine, which I substituted for chicken broth. I’m sure it’s delicious with the wine, and I will definitely be trying it next time I make this dish! This recipe is super quick and easy – you’ll be done in 20 minutes!

Tilapia w/ Tomato Caper Sauce
4 tilapia fillets (about 3 oz each)
1 large tomato, chopped
2 tbsp capers
1 small shallot chopped
1 tsp olive oil
1 tsp minced garlic
1/4 cup low-sodium chicken broth
salt & pepper to taste
non stick olive oil spray

In a small skillet, add olive oil, garlic, and shallots. Cook for 1-2 minutes.
Add tomatoes and chicken broth. Bring to a boil and reduce. Add capers and salt & pepper to taste.
Spray non-stick spray on a pyrex dish to broil tilapia. Add salt and pepper and broil for 8-10 minutes, checking frequently!
When fish is cooked through, remove from oven and pour the tomato-caper sauce over the top.
Serves 2
